In a large bowl, beat the butter and sugars together, then beat in eggs and vanilla extract, vanilla essence.
The coarseness of the sugar granules will help break the butter down, so be sure to do this first. Then add the eggs and vanilla and mix again until completely combined.

Add the flour, salt, and nut chips.
Stir the flour mixture into the wet ingredients and mix until the ingredients are well combined.
Flour a surface down and knead the dough into a roughly oval shape, and smooth down the edges.

Press cookie cutters into the dough to shape cookies.
Try to cut as many cookies as you can, using differently shaped cutters for a pretty variety.
Place the cookies in rows on the baking tray. Leave sufficient room between cookies, as they will expand in the oven.

Place in the oven.
Cook for about fifteen minutes, constantly checking to make sure they are not burning.
Remove when they look a golden brown color.

Check underneath the biscuit to make sure they are done. Then, leave to cool.
If you are giving the biscuit away as a gift, a good idea is to tie it with ribbon.
Stack two on top of each other and tie it. You can use ribbon with designs on it or a solid color.
